MEDITERRANEAN RICE COURSE
From Valencia to the whole world we will make known the gastronomic culture of Valencian rice. Coming new dates is the week of Mediterranean Rice at Innóvateya Cooking School. Suitable for professional chefs to learn and understand how to cook traditional recipes.

And this time we will have an internationally reknowned chef, Juan Carlos Galbis, Winner at the International Competition of Paellas from Sueca, and Guiness record at the largest paella in history for 110,000 people and first Michelin star and Valencia.
We prepare, including other kinds of rice: Paella Valenciana (valencian paella), Arroz a Banda, arroz del senyoret (senior rice) Arroz Negro (black rice), Paella de verduras (Vegetable paella), Fideuá de Gandía (noodles paella), Fideos rossejat (redish short noodle) Arroz caldoso de bogavante (rice with lobster), Arroz amb fesols i naps (rice with beans and turnip) Arroz caldoso de la ribera (wet-stock rice from La Ribera) Arroz al horno de verano (summer backed rice), Arroz al horno tradicional (traditional baked rice) and Arroz de pato y canela (duck rice and cinnamon)

Creative rice by Alejandro Rodríguez
And in the evening we will cook creative honeyed rice guided by Alejandro Rodriguez. He is a teacher of Higher National Certificate Courses and has collaborated with the most influential chefs of the Valencian cuisine.
Among other rice dishes we will prepare; Arroz cremoso de bacalao y coco (cod and creamy coconut rice), Arroz de pulpo (octopus rice), verduras y cítricos (vegetables and citrus rice), Arroz de anguila y remolacha (rice eel with beetroot), Arroz de tendones y caballa ahumada teriyaki (rice tendons and smoked mackerel teriyaki), Arroz de guisantes, berberechos, jamón y menta (rice peas, cockles, ham and mint), Arroz de alcachofas en texturas (artichocke rice) and rice as a desserts.

4 cooking workshops 4 hours / day: Monday, Tuesday, Wednesday and Thursday from 09: 30h to 13: 30h.
4 workshops in Kitchen 3 hours / day: Monday, Tuesday, Wednesday and Thursday from 17: 00h to 20: 00h.
Tasting of all cooked rice included.
Attendees will learn the secrets of Mediterranean rice dishes and will learn utilities for preparing, cooking, preserving and presenting mediterranean rice cuisine.
Also will analyze the different varieties of rices: Senia, JSendra, Albufera, Bomba, Maratelli, Bahía, Marisma, Carnaroli y Arpa.
